The Johnson/Bell family has been renowned for delivering mouth-watering BBQs throughout Texas for over 70 years. The family's recipes have been passed down through generations, from Lubbock in the panhandle, to Longview, Tyler, and Jacksonville in East Texas, and many cities in between, including the DFW Metroplex.

The Rest of The Story

The legacy began with Royce Simmons from Lubbock, TX, and Billy Johnson from Tyler, TX. Although they never opened an official restaurant, they often catered to the surrounding communities. The legend has it that they sold more BBQ than most official BBQ restaurants, even putting some restaurants out of business. Royce Simmons and Billy Johnson were the best in the BBQ business until their death in the late 90s. However, the family legacy must continue to move forward.

The Brisket Boss is continuing the rich heritage of the family tradition, taking it to a new level. Our menu not only features the most succulent brisket you'll ever taste, but it also includes a variety of organic beef, pork, and chicken options, prepared with the same care and passion as our signature item. The restaurant was founded by Royce D. Simmons, who firmly believes in the power of "a good mouth of delicious BBQ." The Brisket Boss is a tribute to his father and uncle's legacy. Their philosophy of combining "Good food, good music, and good times" remains the cornerstone of our business, ensuring that every customer's experience resonates with the joy and authenticity of a family cookout.
